Roasted Acorn Squash with Walnuts and Cranberries
This recipe from Inspired Taste is a favorite of Haley, our project, office and volunteer coordinator. Haley says: Acorn squash is not only super tasty, but it’s also beautiful, inside and out. Mix it with tart cranberries and crunchy walnuts and you get a perfect autumn side dish.

Ingredients
- 2 acorn squash
- 1-2 tbsp. olive oil
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 cup brown sugar
- 4 tbsp. butter
- 1/4 cup walnuts, coarsely chopped
- 1/4 cup dried cranberries
